Rich Fruit Cake

  • 1 pack big raisins
  • 1/4 kilo dried lemon
  • 1/4 kilo nuts
  • 1 lemon (juice and peel needed)
  • 1/2 pack dates
  • 2 cups butter
  • 1/2 cup brandy
  • 2 cups brown sugar
  • 6 eggs
  • 4 cups flour
  • 4 tbsp. baking powder
  • 2 tbsp. cinnamon
  • 1/2 tsp. nutmeg, allspices
  • 1 small bottle grape juice (about 3/4cup)
A day before, cut the fruits and soak in grape juice. The following day, mix the fruits and lemon juice, peel and rind.

Cream butter. Add eggs one at a time mixing continuously. Add sifted flour mixed with baking powder. Add the fruits and the spices.

Put into a mold and bake at 325 degrees F.
