Chicken and Pork Adobo

  • 1 cup vinegar
  • 1 head garlic, crushed
  • 10 pcs. peppercorn, crushed
  • 1 bay leaf
  • 2 tbsp. rock salt
  • 4 tbsp. soy sauce
  • 1 kilo chicken, cut into serving pieces
  • 1/2 kilo pork, cut into 1-inch by 2-inch pieces
  • 1/8 kilo pork liver, cut into 1-inch by 2-inch pieces
  • 1 1/2 - 2 cups water cooking oil for frying
In a saucepan, combine vinegar, garlic, crushed peppercorn, bay leaf, rock salt and soy sauce. Put in chicken, pork and liver. Let soak for 30 minutes to 1 hour. Add water and simmer uncovered until tender. Strain sauce; set aside. Take the liver from the meats and chop finely. Combine with the sauce; set aside.

Heat cooking oil and brown garlic and meat pieces. Pour sauce with liver. Stir once, cover and simmer until sauce thickens.

Serves up to 10 people.
